Today I will be sharing my daughter Samantha’s recipe for Snowball Cupcakes. Aren’t they beautiful??

Snowball Cupcakes

For cupcakes:

bunny snowball Thumb

  • 1 box Devil’s Food Cake Mix
  • 1 small box Jello Chocolate Fudge instant pudding mix
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 cup sour cream

For topping:

  • 1/2 cup unsalted butter (1 stick), softened
  • 3/4 cup Marshmallow Creme or Marshmallow Fluff, about half of one 7-ounce jar
  • 1 teaspoon vanilla extract
  • 1 cup confectioners’ sugar (icing sugar)
  • 1 cup sweetened, shaved coconut

Preheat oven to 350, line cupcake pan with liners, set aside.

Mix together cupcake ingredients until combined, about 2 minutes.  Scoop batter into pan so that each cup is about 3/4 of the way full.  Bake for 20-25 minutes, or until a knife or cake tester comes out clean.  Remove from oven and let cool completely before icing.

Beat together marshmallow and butter until fluffy, about 2 minutes.  Add in vanilla extract and sugar, beating until combined.  Add in more or less sugar until you reach your desired consistency.  Ice the cupcakes and top with coconut.
This recipe makes about 2 dozen cupcakes.

panettoneI would have to say that mine is the Panettone bread. My daughter and I love eating it as is, or toasting it and topping it with butter. Yummy!! It used to be that you could only get this at Christmas time, and only in selected shops. Now it seems that the regular grocery stores carry it for much of the year- however, I still only buy it at Christmas time, so it’s still a a special holiday treat! If I had it all the time, it wouldn’t be special anymore :)

    Cupcakes look delicious , my favor treat are Brach’s peppermint nougats with the tree in the middle. Just peppermint enough and a little bit chewy.

    We are known for making Caramel Corn…..we give away as gifts. My Grangirlie, Daughter-in-law & I have started baking cut-out sugar cookies past few years too….so these 2 things are my favorite treats at Christmas.

    My favourite treat are the traditional Swiss Brunsli cookies. We only make them during christastime and I just love them.

    I love my mom’s butter cookies and my grandmother’s gingerbread men…but now I am the only one to make them. They bring back so many wonderful childhood memories.

    Here in MI Zingermanns Cranberry Pecan Bread is the best! They only bake it in Nov and Dec and it’s a real treat!

    I have a friend who makes fantastic Southern Pecan Pie. Being diabetic, it is definitely a once a year treat and I can only have a small piece, but I certainly do enjoy that one piece.

    I love struffoli. My mother used to make it every year. A few years ago my son found some for sale in an Italian bakery in the city and brought it over for the holiday. I may have eaten all of it.

    Every Christmas I make M&M cookies. It’s a recipe I’ve had for years, but you can make it with a basic Chocolate chip recipe and just substitute M&M’s instead. Love to make them with the Green and Red.

    We make what are called crown jewel cookies which are a simple cookie dough, rolled in nuts and baked then a little well of Raspberry Jam is place in the center.

    Those cupcakes looks very yummy. They remind of the Easter basket cupcakes my mother made for our school’s Easter parties. She would put green food coloring in the coconut for the grass, place little jelly beans on the coconut for the eggs, and stick a small colored pipe cleaner bent over the top of the cupcake for the handle of the basket. She stuck the ends of the pipe cleaner in the top of the cupcake. This might be something your daughter would like to try in the future.

    We love pannetone too! Nothing else smells like it. We like to make baked French toast with it. :)

    My favorite holiday treat is all the cookies. I make so many different kinds to give as gifts to friends and family but my favorite is probably the butterscotch cookie recipe from my aunt.

    great recipe. I am not one for sweets, but at Christmas we always crack nuts. it the only time of the year they have unshelled nuts in the stores here

    I absolutely had fun this week hopping to all of the blogs. I have to say I don’t recall ever being so dedicated to hopping in a blog hop…compliments to the designer.

    My favorite holiday food is our family’s version of a sugar cookie. They taste more like biscuits because they are not very sweet….but they sure are yummy.

    I copied that recipe – I’ll bet kids love them! My favorite holiday treat is what we called Nuts & Bolts growing up. Now days most people call it Chex Mix. I use 3 kinds of Chex, pretzels, Gardetti Rye Chips and lots of nuts – especially cashews. I make 2 big roasters full because I have to send them to a lot of family members – by request!

    Wonderful hop! Thanks so much for all you do, and the recipe looks really cute. My favorite treats are the cookies. I use the basic Spritz recipe from the cookie gun. Some are tinted green, and I make the trees and add sprinkles before baking. Others, I leave plain, but press with a disk that makes them rounder. I dip these half way in melted chocolate and sprinkles. They are both pretty, festive, and fun. Enjoy your nap!

    Cupcake look delish! I have had a nut roll at Christmas time and I just haven’t been able to recreate the recipe. I tend to have issues with the yeast but it is supposed to be simple!

    My favorite treat is a fruit salad from the old Mike Roy cookbook. (Does anyone else remember that?) My mom made it only on Thanksgiving and Christmas, and in our house it is “Christmas Salad”. We used to beg her to make it during the year, and she always said, “If I did that, it wouldn’t be special.” She was so right.

    I love Panettone- never tried it until I was stationed in Italy in the 1980s and get it every year since then!

    Also, Christmas is not the same without my Aunt REgina’s frosted cranberry squares

    My favorite holiday treat is for sure the cookies! My absolute favorite is the gingerbread which I make with a recipe that has been handed down from a friend of a friend and is delicious (it uses a bit of run!). I frost them with the simple powdered sugar frosting and decorate….yummy!

    I love peanut brittle at Christmas. It was always my favorite until my daughter found chocolate covered peanut brittle. There is usually a box of brittle under our tree each year.

    Oh, now i’m going to have to try those cupcakes! Hubby loves coconut, so they would be perfect for him!

    My favorite holiday treat is the no-fail marshmallow creme fudge. I remember making it with my mom as a kid and still enjoy making it now!

    Mine is cut-out cookies. We made some a few days ago and my toddler and I decorated yesterday. They will NOT make it until Christmas LOL
