Simple Garlic & Butter Green Beans Recipe

This Simple Garlic & Butter Green Beans Recipe is so easy- I’m almost embarrassed to call this a recipe. I like to make this for large gatherings because it’s so simple, and you can make it a day or two ahead if you would like. Then all you have to do is pop it in the microwave right before serving. This is the second recipe for the month of November highlighting yummy eats for Thanksgiving. To see last week’s recipe (Pumpkin Lasagna), go to the bottom of the page.

Simple Garlic & Butter Green Beans Recipe

2 tablespoons butter

2 tablespoons olive oil

1 medium red onion, thinly sliced (about 1 cup)

2 cloves garlic, thinly sliced

2 bags of whole green beans or green bean and baby carrot mix, 12-16 oz each

Salt and pepper

Melt butter over low heat in large sauté or frying pan. Add olive oil and stir. Add onion and garlic, increase heat to medium and sauté until onions are soft (about 5 minutes.) Season with salt and pepper.

Add green beans to pan and toss to coat with onion and garlic mixture. (*See instructions below if you are making the recipe a day or two ahead.) Cook just until green beans are cooked through but still brightly colored. Season to taste with salt and pepper.

*At this point, if you are making them ahead, place vegetables in a casserole dish and cover (the green beans will still be frozen at this point.) Place in the refrigerator. Right before serving time, cook in microwave for a few minutes until vegetables are heated through. Season to taste with salt and pepper and serve.
