Autumn is just about here, and that makes me think about delicious seasonal flavors, like apple pie… My youngest daughter came up with this kitchen creation- spiced cupcakes topped with the flavors of apple pie and cheesecake- it’s like 3 desserts in one! And it starts with a boxed cake mix, so it’s pretty simple. We hope you will enjoy this (I know we did!)
Apple Pie Cupcake Recipe
For Cupcakes:
- 15.25 oz yellow cake mix, + ingredients listed on box
- 1 tsp nutmeg
- 2 tsp cinnamon
- 1 tsp vanilla
Preheat oven to 350 degrees. Prepare cake mix according to package directions, adding spices and vanilla. Line muffin tins with cupcake papers, fill 2/3 full with batter, and bake as directed on box.
For Apple Topping:
- 3 apples, diced (we left the peel on, but you can peel if you want)
- 1/2 c. apple juice
- 3/4 c. packed brown sugar
- 1 T. corn starch
- 1 tsp. nutmeg
- 1 tsp. cinnamon
Place apples and apple juice in medium sauce pan. Cover and cook over medium heat for about 10-15 minutes, until apples are tender. Stir remaining ingredients together and add to apples. Cook, uncovered, for an additional 10 minutes until thickened. Chill mixture for several hours.
For the Cream Cheese Frosting:
- 1 1/2- 8oz. packages cream cheese, softened
- 2 c. confectioner’s sugar
- 1 tsp. vanilla
- Dash of salt
Cream all ingredients together with mixer.
Frost cupcakes, spoon apple mixture on top.
Makes about 2 dozen.

For the cream cheese frosting, is it 1&1/2 packages (12 ounces)? Or 1- 1/2 package (4 ounces)?
Sounds yummy, but I don’t want to overthink this and add either too much or not enough cream cheese
