I love making soup because 1. It’s the epitome of comfort food and 2. I’s easy-  just chop everything and throw it in.  The first time I made this, I was having a bunch of people over for a “soup party.” This ended up being the most popular dish of the night- there were no leftovers! Plus- you can make it in your crock pot. If you don’t want to make it in the crock pot, just simmer on low for about an hour- don’t let the soup come to a boil, especially after you add the cream.

Ham and Corn Chowder Recipe

2 T butter

1 medium onion, diced

½ lb carrots, peeled and cut into ½” chunks

2-3 stalks celery, sliced

3 cloves garlic, peeled and crushed

½ lb ham, cut into ½” dice

2 cans chicken broth

1 cup frozen or canned corn

2 cups half-and-half or light cream

 

Melt butter in large sauté pan. Sauté onion, carrots, celery, and garlic until onions are translucent and softened. Remove vegetables to crock pot. Sauté ham in pan until golden, add to crock pot. Use a spatula to transfer pan drippings to crock pot.

Add chicken broth and corn to crock pot. Cook on low for 4 hours. Add cream about 30 minutes before serving,  just to heat through. Add salt and pepper to taste.
